Step by step instructions

Step one: Wash your strawberries

Place your strawberries in a colander and run them under cold water for 10-20 seconds. Be sure that every strawberry gets rinsed off.

Place your washed strawberries on a paper towel and thoroughly dry them off. Then let them air dry for 30 minutes to one hour, as it is very important they are completely dry as chocolate and water don’t mix.

Step two: Melt your white chocolate

In a microwave-safe bowl, place your white chocolate and shortening. Melt your chocolate at half power for 30 seconds. Stir the chocolate and continue microwaving it in 15-second intervals at half power until it is melted, being sure not to burn it.

Instead of the microwave, you can also melt your chocolate on the stovetop using a double boiler. Fill a small saucepan partly full of water and bring to a simmer over low heat. Then, place a double boiler above the simmering water with your white chocolate and shortening.

Allow the water to simmer on low heat, being sure the water itself does not touch the double boiler. Stir your white chocolate and shortening mix constantly until it is melted. Once your mixture of chocolate is melted, remove the double boiler from the heat.

Step three: Dip your strawberries

Grab your washed and dried strawberries by the stem and dip them in the white chocolate. Swirl the strawberry around in the chocolate to make sure it is fully coated. Slowly pull the strawberry out of the chocolate and gently tap it on the side of the bowl to remove any excess chocolate.

Carefully place your dipped strawberry on a baking sheet lined with parchment or wax paper. If the chocolate begins to harden up while you are dipping, microwave it for 5-10 seconds at half power until it loosens back up, stirring after each interval.

Place the strawberries an inch apart on the baking sheet to give them plenty of room. You don’t want the strawberries to bump into each other while the chocolate is still drying.

Step four: Let them dry

Allow your white chocolate-covered strawberries to fully dry before serving. Let them dry at room temperature for half an hour to 45 minutes or chill them in the fridge for 15 minutes. Once the chocolate is set, they are ready to serve. Chocolate-covered strawberries are best when eaten the same day, as they do not stay fresh long.

Tips And Tricks

White chocolate-covered strawberries can be stored at room temperature in an airtight container overnight. Be sure to store them in a cool, dry area away from direct sunlight as they are prone to melting in warm, sunny conditions.

White chocolate-covered strawberries will also keep in the fridge for two to three days. To store them in the fridge, place them in a single file on a paper towel in an airtight container. Chocolate-covered strawberries tend to sweat when in the fridge so the paper towel helps absorb excess moisture.

You can also decorate your white chocolate-covered strawberries. You can top them with red or pink sprinkles, which would make a great Valentine’s Day dessert. You can also drizzle them with dark chocolate or even crushed candy bits.

If you are struggling to dip your strawberries by holding them by the leaves, you can insert a fork or lollipop stick into the stem. This will make the chocolate dipping process easier as you don’t have to worry about the stems breaking off.
