Tips and Tricks – Cake Lace Recipe

Store any leftover edible sugar lace in between layers of parchment paper in an airtight box. Be sure to avoid leaving the mixture out, as it can become brittle and stale.

When properly stored, the edible sugar lace can keep for up to a year. Be certain to avoid keeping it in direct sunlight, as this will cause it to melt. In addition, please do not keep it in the fridge as it may dry out; leading it to become brittle.

If you accidentally overbake your edible sugar lace, place it in a zip lock bag with a damp paper towel for a few minutes. Do not actually let the lace touch the damp towel. This will help the elasticity return to the lace, making it easier to work with.

Tips and Tricks for Sugar Lace Mixture

There are many different lace mats you can purchase. It is best to purchase thinner mats, as thicker ones can be harder to work with. However, the level of thickness is all up to you.

Use a sharp knife to trim any excess off the edible sugar lace. This will allow you to easily get just the right size to put on your cake.

Your lace mat should be washed with water and mild dish soap. It is best to wash them by hand, as they are delicate.

Edible lace can go on cakes decorated with buttercream and fondant as well. The clear piping gel will help keep the lace in place on your cakes.

Sugar Lace Molds: Our Top Pick

There’s a huge selection of sugar lace molds available. Many of which you can buy from craft stores, or a range of online stores such as Amazon. If you’re just starting with sugar lace, and aren’t sure what to choose, I found the Anyana Embossing Mat Lace Band Silicone fantastic for when I was a beginner. It’s just $10.99 and has 4 different lace patterns to choose from to get started.

What I love about this product is that it’s reusable and incredibly easy to clean. Whether you’re a professional or a beginner, it’s super easy to work with. As well as being easy to wash by hand, it’s also dishwasher safe too. You can also freeze it, place it in the oven and even microwave it too!

Is Sugar Lace Edible?

Absolutely. Sugar lace contains all edible ingredients, and can safely be consumed. However, it often tastes quite bland and doesn’t have the best texture. Like many aspects of cake making, these are really for decoration purposes only. But if you enjoy the taste, feel free to eat it, as it’s completely safe.

How Long Does Sugar Lace Last?

Once made, sugar lace can last up to a year. This all comes down to how well you store it though. It should be kept in a cardboard box, in a cool, dry place. It should also be separated with parchment paper to keep it as fresh as possible.

Sugar Lace Recipe Without Meringue Powder

There are many reasons why you may be wanting to make sugar lace without the use of meringue powder. If you’re looking for a recipe that’s meringue powder free, we’re here to help. The ingredients you’ll need for this recipe are:

  • 1 tablespoon of tylose powder
  • 4 tablespoons of boiling water
  • 1 tablespoon of confectioners’ sugar
  • 2 tablespoons of cornstarch or cornflour
  • 1/2 teaspoon of light corn syrup
  • 1 drop of gel food coloring (white usually works best for lace, but you can choose any)

Now all you need to do is:

  1. Grab a small mixing bowl and add the following ingredients: tylose powder and boiling water. Mix until the mixture becomes clear.
  2. Once clear, add the following ingredients: corn starch (or corn flour) and confectioners’ sugar. Mix well, and then add the corn syrup. Keep mixing until you have a smooth mixture.
  3. Once smooth, add the coloring of your choice and stir until mixed evenly.
  4. Use immediately, or store in an airtight container in the refrigerator. Once ready to use, remove it from the fridge and allow it to come to room temperature.
  5. If using immediately, add the mixture to your sugar lace molds and try to make the layer as thin as you can. Now place in the oven at 110F for around 10-15 minutes. When the sides start to come up slightly, your lace is ready.
  6. Lace can be stored in a box in a cool, dry place. It’s important to use parchment paper to separate the lace, for best results.
