What is Praline?

Praline is a type of candy that consists of a type of nuts and sugar. Typically it is made of brown sugar, granulated sugar, heavy cream, butter, and pecans. American Pralines originally came from New Orleans and are most popular in the South, though they can be found all over America.

American Pralines have a creamy, fudgy consistency. They are also typically packed full of chopped or even whole pecans. Though pecans are the most common nut used, almonds and walnuts may also be used as well.

What is Praline

In addition to American Pralines, there are also the Belgian Pralines and French Pralines. Belgian Pralines consist of a  milky hazelnut filling with a chocolate outer shell. French Pralines are the original pralines and consist of a crunchy combination of almonds and caramelized sugar.

  • 1 3/4 cups brown sugar, firmly packed
  • 3/4 cup heavy whipping cream
  • 1/4 cup butter
  • 1 jar marshmallow créme (7-ounce)
  • 1/2 cup butterscotch-flavored baking chips
  • 1 cup chopped pecans
  • 3/4 cup toffee bits
  • 1 teaspoon vanilla

Step by Step Instructions

Step One: Prepare Your Pan

Line your 9-inch square pan with aluminum foil, allowing the foil to extend over the edge. Grease the lined pan with cooking spray.

Step Two: Combine Brown Sugar, Heavy Whipping Cream, Butter, and Marshmallow Creme

In a medium saucepan, combine the brown sugar, heavy whipping cream, butter, and marshmallow crème. Cook the mixture on medium heat for 8-12 minutes, or until the mixture reaches a boil. Continue cooking for another 6-8 minutes or until the candy thermometer reaches 240 degrees Fahrenheit, stirring constantly.

Step Three: Add the Butterscotch Chips

Add in the butterscotch chip and stir into the mixture until fully melted.

Step Four: Add the Chopped Pecans, Toffee Bits, and Vanilla

Remove the fudge from heat. Mix in the toffee bits, chopped pecans, and vanilla.

Step Five: Pour Into Pan

Carefully pour the fudge into your prepared pan and if desired, top with pecan halves. Allow the fudge to cool completely in the pan. Cut the fudge into one-inch squares and serve.

Fudge should be stored in an airtight container at room temperature for 1-2 weeks. Layer the fudge with wax paper before placing it in an airtight container. Be sure to store it somewhere cool and dry to avoid it from melting.

You may also store your fudge in the fridge for 2-3 weeks. It should also be stored in an airtight container between layers of wax paper. For best results, let it reach room temperature before eating.

You may also freeze your fudge as well. Fudge can be frozen for anywhere from 2-3 months to even up to a year. It all depends on the type of fudge and how you store it.
