You can use King Arthur gluten-free all-purpose flour to make a variety of different recipes such as cookies, brownies, cakes, and pizza dough. While sometimes you can substitute gluten-free flour for a ratio of 1:1 without adjusting the recipe, that is not always the case.
In some cases, you can replace all-purpose flour with gluten-free and xanthan gum. The typical rule of thumb is to add 1/4 teaspoon of xanthan gum for every cup of flour the recipe calls for. The xanthan gum does the job of gluten in your recipe so your baked goods will have the right texture.
It is best to use recipes that are designed to be made with gluten-free flour. Gluten is often an important aspect of baking as it contributes to the texture of baked goods. In some recipes, replacing all-purpose flour with gluten-free flour will cause changes to the texture and flavor of the baked good.
Fortunately, King Arthur has some wonderful recipes created to be used with their gluten-free flour. They are specifically adapted to work with gluten-free flour for truly delicious results that are gluten-free. They even make gluten-free mixes to make your baking even easier.
Does King Arthur Gluten-Free Flour Have Xanthan Gum?
King Arthur’s gluten-free flour does not contain xanthan gum. However, many recipes that use gluten-free flour call for xanthan gum.
Since gluten works as a binding agent in many recipes, gluten-free flour needs something in place of it to recreate that binding nature. Fortunately, that can be found by adding xanthan gum to your recipe. By adding xanthan gum with your gluten-free flour you can create elasticity and stickiness in doughs and batters.
Xanthan gum is a type of food additive that works as a thickening agent, or as a stabilizer to prevent separation. It is commonly used in sauces, dressings, ice cream, yogurt, and gluten-free baking.
Typically, 1/4 teaspoon of xanthan gum is used for every cup of gluten-free flour. However, in some recipes, you may need to increase the amount of xanthan gum used. Typically, you never want to use more than one tablespoon of xanthan gum in a recipe as it could cause your baked goods to be too sticky or gummy.
For example, the King Arthur gluten-free biscuits that are flaky call for one teaspoon of xanthan gum. This helps give the biscuits their delicious and flaky texture.
