  • 1 large egg, at room temperature
  • 1/2 cup buttermilk, at room temperature
  • 1/2 cup water
  • 1 teaspoon pure vanilla extract

Cherry Mousse Filling:

  • 1/4 cup well-drained high-quality cherries in syrup, plus 2 tablespoons syrup
  • 1/4-ounce packet unflavored gelatin
  • 4 ounces cream cheese, at room temperature
  • 1/2 cup sour cream, at room temperature
  • 1/4 cup sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon almond extract

Chocolate Ganache:

  • 8 ounces semisweet chocolate, finely chopped
  • 3/4 cup heavy cream

Step by step instructions

Step One: Preheat Oven Then Prepare Cake Pans

Preheat the oven to 350 degrees Fahrenheit, then butter the two cake pans, add a layer of parchment paper, another layer of butter, and then a sprinkling of flour.

Step Two: Combine Dry Ingredients

In a large mixing bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt.

Step Three: Combine the Wet Ingredients

In a medium mixing bowl, combine the melted and cooled butter, buttermilk, egg, vanilla, and 1/2 cup water together until it is nice and smooth. Then, add the wet ingredients to the dry ingredients, stirring until the batter is just combined.

Step Four: Bake the Cake

Carefully divide the cake batter of the chocolate cakes evenly into the two cake pans, then bake for 25 minutes or until a toothpick inserted into the middle comes out clean. Next, let your chocolate cakes cool on a wire rack.

Step Five: Prepare Gelatin for Mousse

In a small bowl, combine the gelatin with cold water then let stand for five minutes. Next, heat the gelatin in the microwave until it becomes melted, about 10 seconds.

Step Six: Combine the Gelatin, Cream Cheese, Sour Cream, Sugar, Salt, and Almond Extract

In a food processor, process the gelatin, cream cheese, sour cream, sugar, salt, and almond until smooth.

Step Seven: Combine with Cherries

Quarter the cherries and add them to a medium bowl along with the two tablespoons of syrup. Add the cream cheese mixture to the cherries and mix well, then refrigerate for five to 15 minutes, until set.

Step Eight: Assemble Cake

Spread the cherry mousse on top of a cake layer and then place the other layer of cake on top. Place the cake with mousse in the fridge for one hour.

Step Nine: Make Ganache

In a small saucepan, bring the cream you are using for the ganache to a simmer, then remove from heat. Add the chocolate to the hot cream, let stand for three minutes and then mix. Next, place the ganache in the fridge for 15 minutes.

Tips And Tricks
