The ingredients you’ll need for this are:

for the cake:

  • 2 3/4 cups of sifted cake flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1 1/2 teaspoons of espresso powder
  • 3/4 cup of softened butter
  • 1 cup of white sugar
  • 1/3 cup of brown sugar
  • 3 large eggs
  • 1/2 cup of sour cream
  • 1/2 cup of milk
  • 1/2 cup of coffee
  • 1 tablespoon of vanilla extract

for the buttercream:

  • 2 cups of softened butter
  • 8 cups of powdered sugar
  • 4 teaspoons of vanilla extract
  • 3 tablespoons of milk
  • 1 tablespoon of espresso powder
  • 1/4 teaspoon of salt

for the ganache:

  • 1 cup of milk chocolate chips
  • 1 cup of heavy whipping cream

Now all you need to do is:

  1. Grease and line 2 8″ cake pans and preheat your oven to 350F. Gather all of the ingredients you need for this recipe.
  2. Grab a mixing bowl and add the following ingredients: baking powder, baking soda, salt, espresso powder, and cake flour. Mix well and leave to one side. In a separate bowl, add the milk and coffee; set aside.
  3. In a separate bowl, add the butter, and using a mixer, cream for a few minutes. It should be pale in color and fluffy. Once it reaches this, add in both the white sugar and brown sugar. Mix for a few minutes; scraping the edges of the bowl as you go.
  4. Individually add the eggs, mixing well before you add the next egg. Once combined, add the sour cream and vanilla extract. You can now add the dry ingredients from the beginning of the recipe and keep mixing until well combined.
  5. You can now pour in the bowl of coffee and milk. Mix until you have a smooth, thick batter. This is when you know it’s ready.
  6. Pour the batter into your pans and bake in the center of your preheated oven for around 35-40 minutes. Remove from oven and leave to cool while you make the frosting and ganache.
  7. To make the buttercream, add the butter to a mixer and mix for a few minutes. Once light and fluffy, gradually add the powdered sugar and mix until fully combined.
  8. Add the milk and vanilla extract. Stir for a minute or so and then add the salt and espresso powder. Mix one last time, and your buttercream is ready to use.
  9. To make the ganache, add the chocolate chips to a heat-safe bowl. Add cream to a saucepan and heat until it simmers. Remove from heat and pour cream into your bowl of chocolate chips.
  10. Mix well and then leave to cool completely before using it on your cake.
  11. Now everything is ready, you can decorate your cake. Place the first cake layer on a cake stand and fill it with buttercream. Place the second layer on top and cover with buttercream; top and sides. Chill for around 15 minutes.
  12. Pour the ganache from the center of your cake, and let it drip down the sides. Using a piping bag, pipe some swirls of buttercream on top of your cake. Your cake is now ready to eat. Slice, serve, and enjoy!
