Step by step instructions for this banana bread recipe with cake mix and pudding

Step 1: Preheat the oven and prepare the baking tins

Preheat your oven to 350°F and make sure that the oven rack is in the middle position. Line the baking tin of your choice with non-stick baking paper (on the bottom) and non-stick cooking spray.

Step 2: Combine the ingredients together

In a large bowl, sift together the yellow cake mix and the banana flavored instant pudding. Next, create a well in the middle of the mixed dry ingredients and add the whisked eggs, vanilla essences, milk, and olive oil. Using a whisk, mix the ingredients together until they are just combined.

Then, gently fold in the mashed banana until the mixture is just combined. Do not over mix the batter.

Step 3: Bake the banana bread

Gently pour the batter into the lined cake tin. Do not bang the cake tin against a table to remove air bubbles – we want the air bubbles to help create some rise in the cake.

Bake the banana bread with cake mix and pudding. After 35 minutes, check whether the cake has been baked completely through by testing it with a toothpick. If it is still raw inside, continue baking it for another 5-10 minutes or until it is done and golden brown.

Step 4: Cool your banana bread and decorate it

Once fully baked, remove the cake from the oven and allow it to completely cool before decorating it.

Then, when the cake has finally cooled, you can continue decorating it however you want. This banana bread made with cake mix is delicious on its own, dusted with some powdered sugar. You can also check out our decorating section below for some more ideas!

You can use this useful flavor-pairing site to help you create a cake that is well balanced in flavor. Personally, we absolutely love adding some freshly chopped and lightly toasted walnuts or some freshly cut strawberries.

If you want to make a frosting for this banana bread, you can create a delicious coconut buttercream frosting, or simply whip up some cream cheese or Mascarpone cheese. Sweetened whipped cream or even vanilla-flavored ice cream also makes excellent accompaniments for this cake.

For garnish, you have a ton of options you can choose from! Like we have mentioned, we love adding some chopped walnuts, but hazelnuts, peanuts, or almonds work equally well. You can also add some toasted coconut flakes or chocolate shavings.

For fresh fruit or freshly cut fruit, the ones that will pair best with this banana bread are berries (including blueberries, raspberries, and strawberries), stone fruits (like plums and apricots), and tropical fruits (for example kiwi, pomegranates, and mango).

Tips And Tricks For Banana Bread Made With Cake Mix

  • If you do not have non-stick baking paper or cooking spray, you can brush the cake tin with melted butter and lightly dust it with cake flour.
  • You have to use the ripest possible bananas you can find. Ripe bananas ensure that you have a smooth texture in your banana bread and that you get a very intense and authentic banana flavor.
  • You can either mash the bananas to create a completely lump-free and smooth puree, or you can roughly mash it using a fork. This will obviously affect the texture of your final cake, however, even if you have lumpy banana inside the batter, once baked it will become soft.
  • If you cannot find banana-flavored instant pudding, you can also use vanilla-flavored instant pudding. And, if you want to intensify the banana flavor then, simply add about half a teaspoon (2.5 ml) of banana extract.
  • You can substitute the milk with vegan milk like almond milk, coconut milk (or cream), or even macadamia milk.
  • To make this banana bread with cake mix and pudding completely vegan, first, make sure to use a vegan cake mix and instant pudding. Then, substitute the milk with vegan milk like mentioned above.

How To Store This Banana Bread?

You can place this banana bread inside an airtight container or a cake storing container (as long as it has an air-tight seal) and leave it at room temperature. The bread will stay fresh for up to 3 days. Alternatively, you can place it inside the fridge where it will stay moist and fresh for between 5-7 days.

You can also wrap the banana bread in plastic or saran wrap, then foil, and freeze it for up to 3 months. To defrost, simply remove it from the freezer and thaw it inside the fridge or at room temperature. Freezing this banana bread works best when it hasn’t been decorated.
