How To Make Margarita Cupcakes With Cake Mix
This shortcut margarita cupcake recipe with cake mix is originally intended to be made from regular vanilla cake mix, but if you don’t have it in your pantry or simply prefer some other flavors, you don’t have to worry because it will work well for regular and gluten-free mixes as well.
Ingredients
For the cupcakes:
- 1 box of cake mix (Vanilla, regular or gluten-free, whichever you prefer)
- 1/4 cup of Tequila
- 2 tablespoons of lime juice
- 1/4 teaspoon of orange extract
For the cream cheese lime frosting:
- 1/2 stick of unsalted butter
- 8 ounces cream cheese (preferably the full-fat one)
- 1 1/2 teaspoons of lime zest
- 1 teaspoon of vanilla extract
- A pinch of salt (preferably kosher)
- 3 1/2 cups of confectioner’s sugar
- 3 tablespoons of lime juice
Additional:
- Decoration (jellied citrus slices, drinking straws…)
Step-by-step guide
#1: Measure the ingredients, prepare the dishes & turn on the oven
- First, preheat the oven. All cake mixes are labeled at which temperature they are best baked, but you don’t always have to listen to them if you know how your oven works.
- Line a cupcake pan with cupcake baking cups, you can use paper or silicone ones, whichever you prefer.
#2: Determine the amount of liquid
The math is simple:
- First, determine the amount of water called for by the cake mix.
- Second, subtract 1/4 cup + 2 tablespoons, which is actually the amount of tequila + lime juice.
- Third, the amount of liquid you have left is actually the amount of water you will add to the cake mix.
- Fourth, an orange extract is added directly, so no accounting is required.
#3: Prepare the mix
- Carefully read the instructions on the back of the box and depending on what the instructions say, add additional ingredients if there are any (usually eggs, oil, etc).
- Once again, I remind you to pay attention to the amount of liquid I mentioned above! In this case, I “subtracted” the amount of tequila and lime juice from the total amount of liquid, i.e. 1/4 cup plus 2 tablespoons, to be precise, a total of 6 tablespoons. Add the remaining amount of water. P. S. I usually use Silver or Blanco Tequila, but you can use whatever you like.
- Add the orange extract.
- Bake until done. Feel free to make a test with a toothpick, poke it into the cupcake, and if it comes out completely dry or with a few pieces on it, it’s done.
- Leave to cool on a wire rack before continuing.

#4: Make the cream cheese lime frosting
- Now we move on to combining the other ingredients. Therefore, place the softened butter in a bowl of the appropriate size and beat it on medium speed until you get a nice, fluffy texture.
- When you are sure it is the right thickness, add cream cheese, lime zest, vanilla, and salt and beat for a few more minutes until they’re well combined. Medium-high will be quite enough. Beat until smooth.
- Reduce the speed to the slowest and gradually add the sugar, not all at once or you will probably end up with a cloud of dust. As the mixture gets better and better composed, increase the speed.
