Incredible Recipe Choco-Mint Brownie Frosting

Putting some mint on top of our favorite brownies was the best decision we ever made, and we absolutely had to share it with you! Over here we are absolute fans of chocolate mint flavored anything. We mean ANYTHING! From After Eights to choco-mint ice cream, it is heaven, am I right? This mint frosting recipe for brownies is the best there is! With these ratios, you will never get toothpasty flavor in your favorite dessert. 

This frosting will only take you about 15 minutes total and you can add it on top of your favorite brownie recipe. It will make enough for one large pan of brownies if you add a thick layer. We recommend using one that is extra fudgy so that the sharp mint will contrast with the deep richness of the chocolate. Adding a layer of chocolate ganache on top would not hurt. Mint Frosting: What You Will Need

Ingredients

  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 2 cups (240g) of powdered sugar
  • 2 Tablespoons (30ml) milk
  • 1 and 1/4 teaspoons peppermint extract
  • 1 drop liquid or gel green food coloring (optional)

Step 1

Cream the butter with a stand mixer or handheld beater using a paddle attachment for 2 minutes or until it is smooth.

Step 2

Add the milk and sift the powdered sugar on top of the creamed butter.

Step 3

Beat on low speed for 2 minutes and switch to high speed for another minute after that.

Step 4

Add gel food coloring if you are using any, and the peppermint extract.

Beat for another minute on high again.

Step 6

Taste and add more extract or coloring if desired.

Mint Frosting: Extra Tips

We recommend gel food coloring because it will not change the proportions of the recipe, but it is totally optional! We find that mint green adds a great contrast with the deep brown of the brownies.

Peppermint extract is better than mint because it tastes a bit more like spearmint than true mint, but this depends on your personal preference. Still, it is very strong so be careful not to add too much.

Mint Frosting: Extra Tips

Use the frosting right away over cooled brownies. This is very important, if not the frosting will melt and everything will become a mess. Once you have spread it over them, put it right into the fridge so that it can set until you are ready to serve them. 

You can cover them with a layer of chocolate ganache or you can choose to add some sprinkles on top. You can even draw a design using some drops of food coloring and a fork, swirling some deeper green over top.

This frosting is very sweet, so using semi-sweet chocolate for making your brownie base is the way to go. This will give a great contrast and make them much more interesting!
