  • 1/2 tsp of xanthan gum (remove if your blend already contains it)
  • 7/8 cup of unsweetened natural cocoa powder, about 70 grams
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of kosher salt
  • 1 and 1/8 cups of granulated sugar, about 225 grams
  •  6 tbsp (84 g) of neutral oil
  •  3pcs of eggs (150 g, weighed out of shell) at room temperature and beaten
  •  3/4 cup of lukewarm water

For The Vanilla Cake Mix

  • 1 and 1/2 cups of all-purpose gluten-free flour, about 210 grams
  • 3/4 tsp of xanthan gum (remove if your blend already contains it)
  • Roughly half a cup of cultured buttermilk blend powder, about 43 grams. Or 1/3 cup of whey powder, about 43 grams
  • 1 tsp of baking powder
  • 1/2 tsp of kosher salt
  • Cup of granulated sugar about 200 grams
  • 8 tbsp (112 g) of melted and cooled unsalted butter
  • 2 pcs eggs (100 g, weighed out of shell) 
  • 1pc of beaten egg white at room temperature, about 25 g
  • 2/3 cup lukewarm water
  • 2 tsp pure vanilla extract

For the Yellow Cake Mix

  • 2 and 1/4 cups of gluten-free, all-purpose flour (about 351 grams)
  • 1 tsp of xanthan gum
  • 2 tbsp of cake enhancer (optional)
  • 1 and 1/3 cups of sugar, about 361 grams
  • 16 tablespoons of softened butter, about 227 grams
  • 1 tsp of salt
  • 2 and 1/2 teaspoons of baking powder
  • 1 tbsp of vanilla extract (gluten-free)
  • 4pcs of large eggs at room temperature
  • 1 cup of room temped milk, about 226 grams

Step By Step Instructions 

For The Chocolate Cake

Step 1

Preheat your oven to 350 degrees Fahrenheit. Afterward, grease and line your two 9-inch cake pans. Then, set them aside.

Step 2

Afterward, place the gluten-free flour, xanthan gum, and unsweetened natural cocoa powder. In addition to that, the baking soda, kosher salt, and granulated sugar inside a large bowl. Then, whisk using an electric mixer. 

Step 3

Next, ensure to make a well in the center of the cake mix in the bowl. Afterward, add six tablespoons of neutral oil, three eggs and, 3/4 cup of lukewarm water. After that, mix to combine after each addition. 

Step 4

Then, pour the cake batter into the prepared greased pans. With that, bake the cakes for about 28 to 30 minutes. Remember to bake it thoroughly.

Gluten Free Chocolate Cake

Step 5

After that, remove the gluten-free cakes from the oven. And let the cakes cool inside the pan for 10 minutes before turning them over into the cooling wire rack. With that, cool the cakes completely. 

Step 6

Once the gluten-free cakes cool entirely, you can stack, fill, crumb coat and, frost your cake. Lastly, serve and enjoy!

For The Vanilla Cake

Step 1

Preheat your oven to 350 degrees Fahrenheit. After that, grease and line your two 9-inch cake pans. Afterward, set them aside.

Next, pour the cake batter into the prepared greased pans. After that, bake the cakes for about 28 to 30 minutes or until it cooks completely.

Step 5

Gluten Free Vanilla Cake

For The Yellow Cake

Step 1

Preheat your oven to 350 degrees Fahrenheit. Afterward, lightly grease your two 9-inch round cake pans.

Step 2

Then, whisk together the gluten-free flour, xanthan gum, and cake enhancer. In another mixing bowl, make sure to use an electric mixer to beat the sugar, soft butter, and salt. In addition to that, the baking powder and vanilla. Afterward, beat for about 45 seconds at medium-high speed. With that, beat it till the mixture becomes smooth.

Step 3

After that, scrape the bowl’s bottom and sides using a rubber spatula. While still using the mixer, beat in the eggs one at a time. Keep in mind that the mixture should become fluffy. Then, scrape the bowl’s bottom and sides again.

Step 4

While still using the mixer, add the milk and beat at low speed. Afterward, mix alternately with the dry ingredients, adding about 1/3 of each at a time. And ending with the dry ingredients. As a result, the batter will curdle after adding the milk addition, and that is fine. Once you mix the last addition of flour in for 30 to 45 seconds, it will come together.

Step 5

Afterward, carefully pour the cake batter into the prepared greased pans. Next, bake the cake for about 25 to 30 minutes or until cooked.

Then, remove the gluten-free cakes from the oven. And let the cakes cool inside the pan for about 10 minutes. With that, let it cool before turning them over into the cooling wire rack. After that, cool the cakes completely.
