  • First things first, place your room-temp cream cheese, lemon juice, cornstarch, salt, and whipping cream inside a mixing bowl.
    1 lb of full-fat cream cheese, about 450 grams, 2 tbsp of cornstarch, 1/2 tsp of lemon juice, 1/2 tsp of salt, 2 tbsp of whipping cream
  • Then, make sure to whip the contents of the bowl using an electric mixer set at medium speed; ensure to do this for about a minute or until it becomes light and fluffy.
  • After that, gradually add your powdered sugar; remember, add a cup of powdered sugar at a time till you use all of your powdered sugar.
    1 lb of powdered sugar, about 450 grams
  • Next, add your vanilla extract to the mixture and continue to whisk at medium-high speed for about two minutes. Likewise, you can do so until the frosting becomes light and fluffy. Not only that, but also till it resembles a whipped cream consistency or your desired consistency.
    2 tbsp of vanilla extract

Notes

When your frosting is too soft, add a bit more powdered sugar. At the same time, if your frosting is too stiff, add a tablespoon of whipping cream to lighten the mixture.
Also, always remember that the more you whisk, the lighter your frosting will become when whisking or whipping. However, avoid over-whipping your frosting, or it will break down and curdle.
