  • One box of yellow cake mix, about 15.25 ounces
  • 1/3 cup of vegetable oil
  • 3 pcs of large eggs
  • 1/2 cup of water
  • One bag of steamable diced sweet potato, about 12 ounces
  • One container of marshmallow fluff, about 7.5 ounces
  • One block of cream cheese (you should soften it at room temperature, about 8 ounces)
  • 1/4 cup and 2 tbsp of unsalted butter
  • brown sugar (1/2 cup and 2 tbsp)
  • 1/4 cup of chopped pecans

Instructions 

  • At 350 degrees Fahrenheit, preheat the oven.
  • Then, microwave your diced sweet potato as directed in the instructions on the package. Afterward, mash your sweet potatoes until they become smooth.
    One bag of steamable diced sweet potato, about 12 ounces
  • After that, prepare your boxed cake mix as directed in the package. Then, add your sweet potato mash. And be sure that you stir until it incorporates well.

  • Next, melt 2 tbsp of butter, add your 2 tbsp of sugar, and ensure to stir.

  • Using your non-stick cooking spray, lightly grease your two 7-inch springform pans. Then, be sure to dust them with flour.
  • Divide and pour your sweet potato cake batter into your springform pans. Likewise, divide your brown sugar and butter mixture. Then, pour into the pans. Also, dollop and carefully swirl using a spoon or butter knife.
  • Afterward, place your cake inside the preheated oven. Then, bake for about forty to forty-five minutes until cooked thoroughly.
  • Once the sweet potato cakes finish, remove them from the oven and cool for about fifteen minutes.
  • Next, prepare your frosting while waiting for your sweet potato cake to cool down. Then, add your marshmallow fluff and softened cream cheese inside a mixing bowl. Afterward, mix using an electric mixer set at high speed. After that, ensure to combine until the mixture becomes smooth. Also, do not forget to set aside.

  • Then, mix 1/4 cup of butter and brown sugar in a saucepan. With that, make sure to bring it to a boil in low heat. After that, be sure to let it simmer for about five minutes. Afterward, remove the saucepan from the heat. And stir in your chopped pecans.

  • After that, remove your cakes from the springform pan. Then, allow them to cool completely. Also, once the cakes cool completely, place one layer of the cake stand. In addition to that, add your frosting. Afterward, spread the marshmallow fluff frosting evenly using an offset spatula. And place the second layer on top. Then, gently press the cake down to secure.
  • Lastly, spread the remaining frosting on the sides using your offset spatula. Then, pour your candied pecans on top of your cake. As always, serve and enjoy!
