  • First and foremost, combine and whisk your flour, baking powder and, salt in a mixing bowl. Then, make sure to set aside.
    2 1/4 cups of all-purpose flour, plus extra for rolling and dusting, 1/2 tsp of baking powder, 1/4 tsp of salt
  • Afterward, whisk your butter and sugar in a large mixing bowl. With that, be sure to utilize an electric mixer set at high speed. Also, whisk ingredients for about two minutes. Likewise, you can whisk till the mixture becomes smooth and creamy. Afterward, add in your egg, vanilla, and almond extract. After that, ensure to whisk the mixture again for about a minute at high speed until well combined. Then, scrape the bowl's sides and bottom using a rubber spatula to mix properly.
    3/4 cup of unsalted butter (make sure to soften to room temperature), 3/4 cup of granulated sugar, One large piece of egg , at room temperature, 2 tsp of pure vanilla extract, 1/2 to 1/4 tsp of almond extract
  • After that, pour the bowl containing your flour mixture into your butter mixture. Then, beat at low speed until combined. Also, if your cookie dough is too soft for your liking, you can add a tablespoon of flour.
  • Then, be sure to divide your sugar cookie dough into two parts. Afterward, place each part into a lightly dusted parchment paper or a silicone mat. After that, lightly dust your rolling pin with all-purpose flour. Then, roll out your dough about 1/4-inch thick. Next, lightly dust your other rolled-out cookie dough. And make sure to put parchment paper on top. Also, place the other part on top and cover it with plastic cling wrap. Afterward, place it inside the refrigerator for about 1 to 2 hours.
  • Next, preheat your oven to 350 degrees Fahrenheit. Then, line your baking sheets with parchment. After that, carefully remove the rolled-out dough on top. And cut out your cookies. Afterward, roll out your sugar cookie dough. Then, start cutting out more cookies as you can. Also, repeat the process with the second portion of your dough.
  • Afterward, line up your cookies into your baking sheets. And be sure to place them 3 inches apart from each other. Also, bake your sugar cookies for about 12 minutes. Likewise, you can bake until they become light brown on the edges. Besides that, allow your cooked cookies to cool on the baking sheet for about 5 minutes. Ensure to do this before placing them into the cooling wire rack to cool completely.
  • Finally, decorate your cookies with your royal icing. Then, be sure to allow them to set. Also, make sure to serve and enjoy!
