Grab a saucepan and add both the gelatin and water. Leave for a few minutes and then heat on a medium heat until the two ingredients are completely combined. Remove from heat and leave to cool slightly.
In a separate bowl, add the cream and beat for a few minutes until soft peaks start to form. At this point gradually add the confectioners' sugar and vanilla extract. Mix until well combined.
Finally, add the gelatin from the saucepan and mix until you have stiffer peaks. Use as needed.
