Today, we’re going to be taking a look at how to make a strawberry cake with pudding mix. I’ve seen so many recipes that say that pudding mix is a great addition to a cake mix, so I had to try it for myself. And they were definitely right! Not only does it bring additional flavor to the cake, but it also makes it moist and changes the texture slightly (if you don’t like a denser sponge, this may not be the recipe for you). But how do you go about making a strawberry cake with pudding mix? Let’s take a closer look.

    For the cake:

    Strawberry Poke Cake with Vanilla Pudding

    • 1 box of strawberry cake mix
    • 2 packets of instant vanilla pudding mix
    • 4 cups of milk
    • 1 container of Cool Whip
    • handful of sprinkles

    Instructions 

    Strawberry Bundt Cake Recipe Using Cake Mix and Pudding

    • Prepare - Gather all of the ingredients you need and preheat your oven to 350F. You'll also need to lightly grease a Bundt pan.
    • Make the Batter - Add the following ingredients to a bowl: cake mix, pudding mix, eggs, sour cream and oil. Mix well until you have a smooth, thick texture.
    • Bake the Cake - Pour the batter into your prepared pan and place in the center of your preheated oven. Bake for around 45 minutes. You can check your cake is ready by placing a toothpick into the center of your cake; if it comes out clean, your cake is fully baked. Remove from oven and leave to cool for around 15 minutes. At this point, remove from pan and leave to cool entirely.
    • Make the Frosting - Add the strawberries to a blender and blitz until fine crumbs remain. Leave to one side. Grab a bowl and beat the butter until smooth. Now add the sugar, heavy cream, salt, vanilla and blitzed strawberries to the butter. Mix until it becomes light and fluffy in texture. You can add more cream at this point if you don't have the right consistency.
    • Decorate - Add the frosting to your cooled cake. Serve, slice and enjoy!

    Strawberry Poke Cake with Vanilla Pudding

    • Bake the Cake - Follow the instructions on the strawberry cake mix packet to bake your cake the way it's intended. Once baked, remove from oven and leave to cool slightly, until warm.
    • Fill with Vanilla Pudding - Add one packet of pudding mix along with 2 cups of milk to a bowl. Mix well. Once mixed, poke the baked cake gently with a fork around 20-40 times. Now pour your pudding mix over the cake, ensuring the mixture is seeping into the holes.
    • Make the Topping - With the remaining milk and pudding mix, add to a bowl and mix well. Gently fold in the Cool Whip and frost your finished cake with the mixture. Use a spatula to ensure it's evenly distributed. Add sprinkles to the top of your frosting and place in the refrigerator for at least 2 hours, to set. Serve, slice and enjoy!
