Combine the chocolate mousse ingredientsPlace all of the ingredients inside a large mixing bowl. Then, beat the ingredients together at a low speed. Keep mixing until they are evenly distributed and made a uniform mixture. This will take less than a minute.
2 cups heavy whipping cream, chilled, 3/4 cup unsweetened cocoa powder, sifted, 2/3 cup confectioners sugar, sifted, 1 1/2 teaspoons vanilla extract, 1/4 teaspoon fine salt
Whip the mousseNext, increase the mixing speed to high and whip the ingredients until they reach stiff peaks. It only takes 3-4 minutes, so do not over-whip the mousse. It could cause it to separate.Remember to scrape down the sides of the bowl to ensure that all of the mousse has been equally whipped.
Divide the cocoa powder mousseDivide the chocolate mousse between the containers of your choice. Then, cover each with plastic or saran wrap.
Set the mousseFinally, place the mousse in the fridge for at least 30 minutes before serving. It should be chilled for the best flavor and texture. You can serve it with a big dollop of whipped cream or freshly cut berries.
Notes
If you would like to change up the flavor a bit, you can use more or less sugar in this recipe. You can also use sweetened cocoa powder instead of pure sugar. And, a different type of cocoa powder will also give you a slightly different flavor. This is not a gelatin-based mousse. That means that the texture (and structure) of the mousse won't allow it to be layered or used as a filling. If you want to make the texture firmer, you will need 1 1/2 teaspoons of gelatin powder, 1 1/2 tablespoons of cold water, and 3 tablespoons of hot boiling water. Sprinkle the gelatin over the cold water and leave it to soften for a minute. Then, stir in the boiling water to dissolve the bloomed gelatin. Cool it slightly. Finally, whisk it into the beaten whipped mousse mixture.
