The most important step before leveling a cake after baking is to properly cool it.

First, cool it inside of the cake pan for 15 minutes. Then, remove it from the pan and allow it to cool completely for 20-30 minutes.

Place the cake on a level surface. Measure out the height of your level using a ruler.
