  • 2/3 cup of finely chopped semi-sweet chocolate bars
  • 1 cup of heavy cream

Instructions 

  • Before anything else, make sure to prepare and cut your cooled marble cake into layers of choice.
  • After that, in a mixing bowl, whisk the cocoa powder and hot water. Afterward, set it aside.
  • Then, in a heat-proof bowl, add the chopped chocolate compound. After that, please place it in the microwave for twenty seconds, stir in the melted chocolate using a rubber spatula. If it’s not as melted, you can add a few seconds more.
  • Then, pour the cocoa water mixture into the melted chocolate and whisk until completely incorporated.
  • Afterward, prepare a hand or stand mixer fitted with a wire whisk attachment. Then, whip the heavy whipping cream for two minutes at high speed until it becomes smooth. Next, turn the mixer to low. Then, add the confectioners’ sugar to the mixer. After that, at medium-high speed, add the vanilla. Make sure to beat for three minutes or until the cream is at a medium peak.
  • Next, pour in the chocolate mixture and cautiously fold it in together. Make sure not to over-mix because it can cause the mousse to deflate.
  • Finally, cover the mouse and let it chill in the refrigerator for an hour or until needed.

Notes

You can store the mousse for up until five days in the refrigerator. Because of that, ensure to seal it tightly in a clean container. Moreover, cocoa powder usually dries the cake out. That is why it is essential to bloom the cocoa powder.
In addition to that, blooming is when you mix the cocoa powder with coffee, cold oil, or hot water. After that, let it sit for a couple of minutes till it begins to appear spongy. As a rule, ensure to level it with the top of the dam to make an even layer between cakes whenever filling the cake.
Furthermore, it is best to keep this marble cake at room temperature. With that, make sure to keep it for approximately two to three days. Likewise, ensure that it is not stored at room temperature when the environment is humid. For that reason, it would also be helpful to store this marble cake in an airtight container. Doing this protects it from the dust in the air.
You can also store the marble cake in the fridge with an airtight container. Because of this, it will last for about five to seven days when refrigerated. Although, remember that fridge may likely dry out your marble cake regardless if it is in an airtight container.
