Over here we are absolute fans of chocolate mint flavored anything. We mean ANYTHING! From After Eights to choco-mint ice cream, it is heaven, am I right? Putting some mint on top of our favorite brownies was the best decision we ever made, and we absolutely had to share it with you! This mint frosting recipe for brownies is the best there is! With this ratios you will never get toothpasty flavor in your favorite dessert.
We recommend gel food coloring because it will not change the proportions of the recipe, but it is totally optional! We find that mint green adds a great contrast with the deep brown of the brownies.
Peppermint extract is better than mint because it tastes a bit more like spearmint than true mint, but this depends on your personal preference. Still, it is very strong so be careful not to add too much.
Use the frosting right away over cooled brownies. This is very important, if not the frosting will melt and everything will become a mess. Once you have spread it over them, put it right into the fridge so that it can set until you are ready to serve them.
You can cover them with a layer of chocolate ganache or you can choose to add some sprinkles on top. You can even draw a design using some drops of food coloring and a fork, swirling some deeper green over top.
