  • Gradually add one tablespoon of cold water at a time into the mixture. Mix it until the dough is soft and smooth.
  • In a floured bench, knead the dough and shape it into a ball. Then, roll the dough out to about 1/8-inch thickness using a rolling pin. Get the 9-inch pie pan, and turn it upside down on top of the dough. Using a sharp knife, trace it, and cut it 2 inches larger than the pie pan.

  • In another medium bowl, whisk in large eggs and a can of pumpkin pie mix. Whisk them together until the batter is smooth, stir in the sugar-spice mixture until it becomes homogenous.
  • Next, gradually add the evaporated milk into the batter till it is smooth.
  • Pour the filling into the crust, and bake it for about 40 minutes to an hour. Then, let it cool in the cooling rack for at least an hour. Serve and enjoy.

Notes

Making holes in the crust helps it from avoiding the crust to inflate. This recipe would last for a week in the fridge with proper storage. You can always add whipping cream on top of your pumpkin pie. When baking, it is best to use a baking sheet beneath the pie pan to prevent it from spilling.
