Filling

  • 500 g Frozen fruit mixed berries
  • ¼ cup Water
  • ¼ cups Brown Sugar
  • ½ fresh orange

Topping

Instructions 

  • Preheat the oven to 180˚C or 350 ˚F.
  • In a saucepan, pour the ¼ cup of water, put the frozen mixed berries, and add ¼ cup of sugar. Squeeze out half of the fresh orange. As you bring it to a boil, cover it with a lid.
  • Set it aside once the mixed fruits are done, and start making your topping.
  • Sift in the flour, baking powder, sugar, and salt in a mixing bowl. Using an electric stand mixer, gradually mix the butter using the paddle attachment. Next, cut the butter into the flour mixture. Make sure it is sandy looking then, pour in the milk, and mix until your batter looks thick.
  • Get your 9×9-inch pan, and spread your mixed berries evenly into the pan. Dollop the batter over the berries, make sure to leave berries uncovered then, add almond flakes for additional texture on top.
  • Afterward, bake it for about 30-40 minutes until golden and crisp. Baking temp 180˚C or 350 ˚F
  • Let the cobbler cool in the cooling rack for at least 10 minutes and then serve it warm with vanilla ice cream.

Notes

  • Add almond flakes to the topping to enhance texture.
  • You may also add muscovado sugar for liquorish taste.
  • Use cold and diced butter when combining butter and flour mixture to achieve more sandy look crumbs.
