Equipment

  • Paper towel
  • Plate or baking sheet
  • Saucepan
  • Heat-proof bowl
  • Rubber or silicone spatula
  • Toothpick, optional
  • Piping bag and nozzle

Ingredients

  • 10-15 fresh strawberries
  • 1 cup dark chocolate, roughly chopped, or use chips

Instructions

  • Prepare the strawberries
To start, wash all of your strawberries under cold running water. You can also wipe them with a soft damp cloth, but just make sure all of the dirt is completely removed.
Once washed, dry the strawberries with some paper towel, ensuring all parts are dry. Place them all on a paper towel-lined plate so any excess water can run down.
Set the strawberries aside until you need them later.

  • Melt the dark chocolate
While your strawberries are drying, start melting your chocolate. The best method to use is the slow one. Melt the chocolate over a double boiler. Ensure that the glass bowl fits over the saucepan and that it never gets too hot.
Keep stirring the chocolate gently while it is melting. After every 30 seconds, remove the bowl from the heat and allow the chocolate to cool slightly for another 30 seconds. By repeating this technique, you can easily prevent the chocolate from burning or seizing.
Once your chocolate is fully melted, you can allow it to cool for 2-3 minutes. During this time, the chocolate will thicken, but don't worry too much about it. It should cool slightly to prevent "cooking" the strawberries and making their surface mushy.

  • Dip the strawberries
While your chocolate is cooling, line a baking sheet or plate with non-stick baking paper.
Then, hold the strawberry by its tip and stem. Make sure to grab it tightly so that the strawberry can be dipped. But, don't break off the leaves. Alternatively, insert a toothpick underneath one of the leaves into the flesh. This way you can hide the hole.
All that is left to do is to dip the strawberry. After completely coating the berry, set it onto the lined baking paper. Wait for the chocolate to completely harden before moving on to the decorating part.
  • Decorate the dipped strawberries
Finally, once your chocolate coating has set, you can begin decorating the strawberries. Reheat some chocolate and again, allow it to cool slightly. Place the chocolate inside of a piping bag fitted with a tiny nozzle.
Create a beautiful chocolate drizzle over the coated strawberries. If you want to add garnishes, you can do so now over the melted chocolate. Once the chocolate has set, the garnishes will no longer stick.
