  • Prepare the Strawberries and Lemon - Remove the stems from the strawberries and cut them into quarters. Cut the lemon in half and squeeze the juice from one half into a bowl, removing any seeds. If you are using fresh strawberries, be sure to wash them and the lemon prior to cutting.
  • Combine the Ingredients - Add the cut strawberries, lemon juice, cornstarch, sugar and salt to the saucepan.
  • Make the Sauce - Heat the saucepan to medium-low heat and gently stir the ingredients. Stir until the sugar has dissolved and the strawberries become soft about ten minutes. Remove from heat and allow it to cool before using it.
  • Add this strawberry topping to your favorite cheesecake and you will have a mouthwatering dessert. Try it with a classic New York cheesecake or pour it on some chocolate cheesecake for delicious results.

  • If you don’t have a lemon in hand, you can also use lemon juice. You can use one tablespoon of lemon juice in place of juice from half a lemon. The lemon helps enhance the taste of the strawberry, which makes for an even better sauce.
  • This strawberry topping is designed to have chunks of strawberry in it. If you would rather have a smooth sauce, you can break them down with the whisk or a wooden spoon while cooking. Then pour the sauce through a fine-mesh strainer to remove any chunks of strawberry after cooking.

  • You can thaw your strawberry topping in the fridge overnight or warm it up on the stovetop. You can also microwave it on thirty-second intervals until it has thawed out.
  • This strawberry sauce can be served warm or cold. To warm it up, simply place it in a microwave-safe bowl and microwave it for 15 seconds. Thoroughly mix the strawberry sauce after microwaving and microwave for longer if needed.
