  • 1 pound butter
  • 2 cups sugar
  • 6 eggs
  • 1/2 pound candied cherries
  • 1/2 pound candied pineapple
  • 1 pound plus 3/4 cup pecans
  • 4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla

Instructions 

  • Preheat the oven and prepare the large tube pan.
    Preheat your oven to 250 degrees Fahrenheit. Spray the large tube pan with cooking spray and then line with parchment paper.
  • Cream butter and sugar.
    In a large mixing bowl, cream the butter and sugar until smooth and creamy.
    1 pound butter, 2 cups sugar
  • Add eggs, flour, baking powder, and salt.
    Beat together the eggs and add them to the creamed butter and sugar mixture. Then, add three cups of flour, baking powder, and salt, mixing the batter until combined.
    6 eggs, 4 cups flour, 1 teaspoon baking powder, 1/4 teaspoon salt
  • Mix together remaining flour with the fruits and nuts.
    Mix the remaining one cup of flour with the candied fruits and nuts. Then add the mixture into the cake batter along with the vanilla and combine.
    1/2 pound candied cherries, 1/2 pound candied pineapple, 1 pound plus 3/4 cup pecans, 2 teaspoons vanilla
  • Bake the cake.
    Carefully pour the cake batter into the large tube pan. Bake the cake for three hours and then let it cool for one hour on a wire rack.
  • For extra flavor, place the cake in an airtight container for up to four days with a glass of sherry. The sherry will permeate into the cake to give it a flavor boost.
