For The Banana Nut Cake Recipe

For The Icing

  • 3 1/2 tablespoons and 3/4 teaspoon of softened butter
  • 2 1/2 cups of powdered sugar
  • 3 1/2 tablespoons and 3/4 teaspoon of heavy whipping cream
  • 1/4 cup and a tablespoon of halved pecans you can add more if desired
  • Vegetable shortening for greasing the pans

Instructions 

For The Banana Nut Cake

  • Preheat the conventional oven to 350 degrees Fahrenheit. Then, take your 9-inch round cake pans. And grease them using vegetable shortening. After that, dust them with flour. Afterward, set it aside.
  • Next, separate the yolks from egg whites into different bowls and pour the buttermilk into a different mixing bowl. After that, add the baking soda and stir.
  • Afterward, cream the butter in a different mixing bowl. And beat it for about 2 minutes until the butter turns lighter in color. Then, add the white sugar. And mix it for another 2 to 3 minutes until it becomes light and fluffy.
  • Add the yolks to the mixture and then add the vanilla extract. Mix the mixture until everything combines well. Alternately add the flour with the mashed bananas. And mix with every addition.
  • Afterward, stir or mix the buttermilk with the baking soda in the mixture. Make sure to combine well.
  • With the use of an electric mixer, whisk the egg whites until it becomes stiff. Then, add the pecans into the cake batter mixture.
  • After that, take the cake batter and fold the egg whites using a rubber spatula. Then, pour the banana nut cake batter into the prepared cake pans.
  • Afterward, bake the banana nut cakes for 25 minutes. Or until the cake cooks thoroughly. To check if the cakes cook thoroughly, you can use a toothpick. With that, make sure to insert it at the center of the cake. If your toothpick comes out clean, it is okay. You can also use the pressing method. Press the cake; if it bounces back. And leaves no dent in the cake; it is ready.
  • Once the banana nut cakes cook entirely, take them out of the oven. And allow the cakes to cool over the counter for 10 minutes and turn over the cake into a cooling wire rack. And remove them from the round cake pans. Next, allow the cakes to cool completely and then set aside.

For The Icing

  • Before anything else, take a bowl. And make sure to cream the butter for approximately 2 minutes until the butter becomes lighter. After that, add the powdered sugar and mix for another two to three minutes. Or mix it till the mixture becomes incredibly light and fluffy.
  • Afterward, add the heavy cream. And mix until it combines well. And you acquired your desired consistency. Lastly, set it aside.

Notes

If you do not have any buttermilk, you can make your own. With that, put a tablespoon of distilled white vinegar into a cup of milk. And let it sit for ten minutes. Moreover, use very ripe bananas in making this recipe to achieve a moist cake and rich banana flavor.
Furthermore, you can gently fold the wet and dry ingredients using a spatula for a soft texture. Additionally, do not use fermented bananas because they may contain harmful bacteria. For storing ripe bananas, you can store them in the freezer with or without the peel. Afterward, thaw the bananas at room temperature before using them for baking. 
If you are dealing with picky eaters who do not want banana chunks, use an electric mixer. Also, if you like nuts other than pecans, you can use them to make the banana nut cake or cake topping. In addition to that, you can replace pecans with walnuts in the banana nut cake recipe if you desire. Keep in mind that walnuts complement the sweetness of the banana as it has a slightly bitter taste to it.
Also, you can serve the cake immediately after assembling it. But you can store it inside the refrigerator if you plan to serve it later. Likewise, you can lessen the icing if you like. Then, add only the desired amount of icing on top of the cake. With that, you can store the banana nut cake inside the refrigerator or chiller for up to 4 days.
