Delicious Strawberry Cupcakes Recipe With Cake Mix

Ingredients
  

For The Strawberry Cupcakes

  • A pack of french vanilla cake mix about 15.25 ounces
  • 1/2 pack of instant vanilla pudding mix about 3.4 ounces
  • 1 cup of greek strawberry yogurt
  • 3/4 cup of vegetable oil
  • 1/2 cup of water
  • 4 pcs of eggs make sure to beat lightly
  • 2 tsp of pure vanilla extract
  • 1 cup of diced fresh strawberries about ten medium size

For The Strawberry Buttercream Frosting

  • Four sticks of unsalted butter at room temperature about 2 cups
  • 1 and 1/2 pounds of sifted powdered sugar about 24 ounces or 5 1/2 cups
  • 2 tsp of pure vanilla extract
  • Eight medium fresh strawberries you will need 4 to 5 tablespoons of puree

Instructions 

For The Strawberry Cupcakes

  • Ensure to preheat the oven to 350 degrees Fahrenheit. After that, take your cupcake pans. And line them with cupcakes liners. Then, set aside your cupcake pans.
  • In a large mixing bowl, put the vanilla cake mix, pudding mix, strawberry Greek yogurt, and oil. In addition to that, add water, eggs, and vanilla. Then, mix and combine all the ingredients using your electric mixer fitted with a paddle attachment. After that, beat at medium speed for about two minutes until well combined. Afterward, fold in the fresh diced strawberries using a rubber spatula.
  • Using an ice cream scooper, divide the cupcake batter between twenty-four cupcake liners in the cupcake pans. Then, use about three tablespoons of batter per cupcake liner.
  • After that, bake your strawberry cupcakes inside the oven for about eighteen to twenty-two minutes or until cooked. With that, check it by using a toothpick or by gently pressing the cupcakes. If the cupcakes spring back without leaving a dent, the cupcakes cook thoroughly.
  • Once the strawberry cupcakes cook entirely, take them out of the oven. And allow them to rest inside the cupcake pans for about ten minutes. If the cupcakes have a slight depression in the center when cooled, do not worry.
  • Then, remove the strawberry cupcakes from the cupcake pans. After that, transfer them to the cooling wire rack to cool completely. Lastly, set aside your cupcakes and work on your frosting.

For The Strawberry Buttercream Frosting

  • Before anything else, cream your butter using an electric mixer fitted with a paddle attachment. Then, set your electric mixer at medium-high speed. After that, beat your butter for about three minutes. Or beat it until it becomes lighter in color.
  • Afterward, put your electric mixer to low speed. And gradually add the powdered sugar until the sugar incorporates entirely with the butter. Then, add the vanilla extract and three tablespoons of strawberry puree. Because of this, mix until the mixture combines completely.
  • Then, turn off your electric mixer. And ensure to check the taste and texture of your strawberry buttercream. After that, you can add more strawberry puree if you want more strawberry flavor. For that reason, please remember that your buttercream frosting may result in a thinner frosting. It usually happens if you add more puree than in the recommended amount. Also, please turn on your electric mixer, set it to medium-high speed. And beat the mixture for approximately three to four minutes. Or beat it until the buttercream mixture becomes light and fluffy.
  • Finally, scrape the bowl and place your strawberry buttercream frosting inside a piping bag with a closed star piping tip.

Notes

For the most part, if you do not have fresh strawberries, you can use frozen strawberries for your puree. Moreover, place frozen strawberries inside a bowl to thaw. With that, once the strawberries thaw entirely, place them inside a food processor or blender. After that, process them until they become smooth. 
Furthermore, if the food processor and blender are not available, you can cut the thawed strawberries into small pieces. Afterward, mash them using a fork. Because of this, mash it until it is smooth. Additionally, to add more flavor to the buttercream, you can replace the milk with strawberry puree. Likewise, you can add a drop of gel food coloring to your strawberry buttercream. Though, only do this if you want to add more color.
Besides, the boxed vanilla cake mix combined with the yogurt and fresh strawberries creates moist cupcakes packed with strawberry flavor. Moreover, using diced fresh strawberries in the cupcake batter adds extra flavor and texture to the cupcakes.
