Sensational Whole Wheat Fig Bars Recipe

  • Preheat Oven and Prepare Baking Trays - Preheat your oven to 350 degrees Farenheit. Line two baking trays with silicone baking mats.
  • Soak Figs - Place the figs in a small heatproof bowl. Fill the bowl with hot water and let the figs soak for 10 minutes.
  • Puree Figs - Remove the figs from the water and add them to the food processor, saving the water. Add the honey and one tablespoon of the water the figs were soaked in. Blend until the figs become a puree that is smooth and spreadable.
  • Beat the Butter and Sugar - In a large bowl with an electric mixer, beat together the butter and sugar for two minutes until it is nice and smooth.
  • Add the Egg, Vanilla and Whole Wheat Flour - Add the egg and vanilla to the butter mixture and beat until it is all incorporated. Then, add the whole wheat flour and mix together until a dough forms.
  • Roll the Dough Out - Divide the dough evenly into two balls. Place them each on a piece of parchment paper. Roll each piece of dough into 12 x 4-inch rectangles using a rolling pin.
  • Add the Fig Filling - Spread the fig filling on each piece of dough. Spread on only half of each piece, leaving a border of 1/4-1/2 inch.
  • Fold and Cut - Fold the dough over top itself and then gently press the edges together. Cut each log into 10 bars, using a pizza or dough cutter.
  • Bake the Bars - Transfer the fig bars to your silicone-lined baking sheets. Bake for 15-20, or until they are golden brown on top. Allow the fig bars to cool completely on a wire rack.

Notes

Store the homemade fig bars in an airtight container at room temperature for 5-7 days. You can also store them in the fridge for a week, but for best results keep them at room temperature or let them reach room temperature before eating.
You can also freeze these figs bars as well for three to six months. Wrap the fig bars in plastic wrap and then place in a Ziploc bag or cover them with aluminum foil. When ready to eat, let them sit at room temperature for two hours or heat them in the microwave for 15-30 seconds.
Though these bars taste wonderful as is, you can also top them with oatmeal or nuts before you bake them. This will give them some additional flavor. Instead of honey, you can also use maple syrup as well.
