Sensational Garbanzo Bean Flour Cookies

  • Preheat the Oven and Prepare the Cookie Trays - Preheat the oven to 350 degrees Farenheit. Line the cookie trays with parchment paper.
  • Mix Dry Ingredients - In a large mixing bowl, combine the garbanzo bean flour, salt, baking soda, whole oats, and brown sugar.
  • Melt Coconut - In a microwave-safe bowl, microwave the coconut until it becomes a liquid. Microwave in 30-second intervals.
  • Mix Wet Ingredients - In a medium bowl, combine the coconut oil, mashed banana, vanilla extract, and Greek yogurt.
  • Add the Wet Ingredients Into the Dry Ingredients - Carefully pour the wet ingredients into the dry ingredients. Use a rubber spatula or wooden spoon to combine the cookie dough.
  • Fold in Chocolate Chips and Walnuts - Using a rubber spatula, carefully fold in the chocolate chips and walnuts. Mix until evenly distributed.
  • Bake the Cookies - Form the cookie dough into 20 balls. Place the cookie dough on the baking trays two inches apart. Bake the cookies for 18 minutes and allow them to cool on a wire rack.

Notes

Store these garbanzo beans cookies in an airtight container at room temperature for 3-5 days. You can also freeze them for nearly three months. Place cookies in a Ziploc bag, making sure to tightly close the bag.
When ready to enjoy, allow the cookies to thaw at room temperature for one hour on the counter. You can also place frozen cookies in the microwave for 15-30 seconds to thaw. This will make the cookie taste like it is fresh out of the oven.
If desired, you can leave out the walnuts in the recipe. You can also add more chocolate chips or even add some caramel chips as well. You can even try adding a couple of tablespoons of peanut butter as well.
These cookies taste great on their own or served with ice cream. You can even make them into cookie sandwiches by putting your favorite frosting in the middle. This will make for an extra delicious treat to share with your family.
