Chick Pea Flour Cookies

Ingredients
  

  • 1 1/2 cups of chickpea flour
  • 1 tsp of baking soda
  • 1/4 teaspoon of salt
  • 1/3 cup of honey
  • 1 pc of egg
  • 1/2 cup of coconut oil
  • 1 tsp pure vanilla extract
  • 1/4 cup of nut butter or sun butter
  • 1/2 cup of rolled oats
  • 1/4 cup of unsweetened coconut flakes
  • 1/4 cup of raisins

Instructions 

  • Before anything else, preheat the oven to 325 degrees Fahrenheit.
  • Then, with parchment paper, line the baking sheet properly.
  • After that, put the chickpea flour, baking soda, and salt in a large mixing bowl, then combine the ingredients.
  • Afterward, prepare the wet ingredients. Then, mix the honey, egg, coconut oil, vanilla extract, and nut butter in a separate bowl.
  • In the dry ingredients, make a well and pour the wet ingredients. Then, mix all the ingredients till well combined.
  • After that, add the rolled oats to the mixture and fold the raisins with the combined mixture.
  • In the baking sheet lined with parchment paper, create golf-sized dough balls and flatten them using a rolling pin.
  • Afterward, place the baking sheet with the dough in the oven. After that, bake for about twelve to fourteen minutes until golden brown.
  • Then, take the cookies out from the oven and let them cool down on a wire rack.
  • Once the cookies cooled entirely, you can put them in a serving platter and serve.

Notes

You can make it at home if you do not have chickpea flour. So with that, use chickpeas that are raw and dried. Using a high-powered blender, blend the chickpeas for about two minutes until they are very fine. Or till it achieves the same flour texture as actual chickpea flour. Then, remove the lumps from the blended chickpea flour using a sieve.
Suppose you plan to lose a few pounds. Or want to reduce your calorie intake. You can try substituting chickpea flour in your recipes because chickpea flour has lesser calories than white flour. Remember, consuming low-calorie foods reduce your calorie intake since it causes you to eat lesser portions. It also has higher protein content than wheat flour, decreasing hunger and increasing the calories you burn.
Chickpea flour behaves similarly to wheat flour in baking, which is a good substitute for flour. Therefore, people who have gluten intolerance can enjoy baked goods using chickpea flour instead of wheat.
Furthermore, make sure to store chickpea flour at room temperature in an airtight container. With this, it can last up to six months. Likewise, it can even last longer if kept in the fridge. In addition to that, you can put it in the freezer. Doing so would make it last for about one to two years.
