No Bake Rice Krispie Cookies: Quick Recipe

Ingredients
  

  • 1/2 cup of nonsalted butter
  • 1 and 3/4 cups of granulated or white sugar
  • 1 and 1/2 cups oats quick-cooking
  • 1/4 teaspoon of salt
  • 1/2 cup of whole milk; you can use light cream or evaporated milk
  • 1/2 cup of peanut butter of your choice; it may be smooth or chunky but make sure not to use natural peanut butter for best results
  • 1 to 2 teaspoons of vanilla extract
  • 1 and 1/2 cups Rice Krispies

Instructions 

  • Prepare a large saucepan, put it over medium-high heat, then add the butter, sugar, salt, and whole milk. After that, begin stirring over medium-high heat for about two minutes. Keep stirring till all the ingredients combine well and become smooth. Then, make sure to bring the mixture to a full boil. And continue boiling for three minutes while occasionally stirring, about once or twice. Ensure that the mixture does not boil for more than three minutes. The main reason is that the mixture will become dry and have a crumbly texture if it exceeds.
  • Carefully remove the saucepan away from the heat. Then, stir in the peanut butter and vanilla to ensure a smooth consistency. Next, add the oats and Rice Krispies until everything incorporates well. Let the mixture rest for about three minutes to firm up a bit.
  • Afterward, drop the mixture onto the lined baking sheets with parchment paper using a tablespoon or ice cream scooper. Then allow the mixture to set and become firm for about an hour at room temperature. Also, you can place it on the refrigerator to speed up the process.
  • Finally, take out the cookies in the fridge and serve.

Notes

You can substitute the butter in the recipe with margarine, or combine vegetable shortening and butter. In addition to that, you can make the cookie recipe with all rice Krispies. Or you could use all oats in this recipe if preferred. Moreover, dark chocolate aids in binding the cookies together and makes the cookies tastier and richer. The rice Krispies are great as they add texture to the cookies. And the oats make the cookies chewy and more satisfying.
Furthermore, you can store the no-bake cookies in an airtight container in the freezer to preserve their crispiness; storing them in the freezer will make them last longer. Bear in mind that it is essential to use a large saucepan. The main reason for this is that it will rise very high when the mixture comes to a full boil. As a result, it may cause the mixture to overflow.
