  • Preheat the oven to 350 degrees Fahrenheit. Then, grease and line the cake pan.
  • Afterward, in a mixing bowl, whisk in the flour, baking powder, baking soda, and salt.
  • Next, prepare the bowl of your hand or stand mixer. After that, cream the butter at medium-high speed till it becomes smooth. Then, at low speed, gradually add the granulated sugar. Afterward, for approximately two minutes until fluffy, make sure to beat on medium-high speed. Do not forget to utilize a rubber spatula to scrape the bowl’s bottom to incorporate it thoroughly. After that, fold in the vanilla extract.
  • Then, at low speed, carefully add the eggs one at a time. Afterward, beat them into the mixture. Next, at medium speed, alternately add in the dry and buttermilk in a sequence dry-wet-dry-wet-dry. After that, beat for two minutes till the mixture incorporates thoroughly. With this, try not to exceed above medium speed, or the mixture will over-mix.
  • After that, scrape and fold in the mixture. Then, be sure to add a few drops of pink food coloring. Afterward, add a few drops more if you want to achieve a darker color.
  • Then, bake the cake at 350 degrees Fahrenheit for about fifty minutes. You can also use a skewer to insert it into the cake’s middle. With that, it is okay if it comes out clean. Lastly, cool down on a wire rack for at least an hour before cutting and frosting.

Notes

Use liquid pink food coloring instead of gel food coloring. The main reason is that it can easily mix with the milk and egg mixture without clumping. However, if gel food coloring is the only thing available at home, mix it with a teaspoon of warm water. Be sure to do this before putting it on the cake.
If buttermilk is unavailable, all you need to do is replace two percent of milk with vinegar or lemon. Because of that, for every cup of milk, add a tablespoon of lemon juice or vinegar. Allow it to settle until it curdles or for at least ten minutes.
Moreover, you do not need to color the frosting; you can even leave it white. Additionally, it would be best to use room temperature unsalted butter for the cake. With that, make sure that the unsalted butter does not get too warm.
Also, make sure to put the pink velvet cake in the fridge. It is essential, especially if you covered the cake with cream cheese pink velvet buttercream. In addition to that, you can make the cake layers ahead of time and freeze them; doing this breaks the process up. So with that, make sure to wrap the cake layers with plastic wrap and, after that, tin foil. Because of this, it can last for up to a month before assembling and frosting the cake.
