  • 60 grams cold full cream milk
  • 10 grams of unflavored transparent gelatin
  • ¼ cup cold full cream milk
  • 1 tsp vanilla extract
  • 4 tbsp powdered sugar

Instructions 

  • Pour 1/4 cup of cold, full cream milk in a small bowl.
  • Sprinkle 10 grams of unflavored gelatin into the milk and wait for 5-10 minutes for it to set and become slightly firm.
  • Put the gelatin mixture in a microwave for a least 10 seconds or prepare a bain-marie and let it melt. Set aside to cool down.
  • Once the mixture turns into a liquid, prepare a large mixing bowl and pour 60g of cold, full cream milk, powdered sugar, vanilla extract, then incorporate the gelatin mixture. Whisk until combined.
  • Put the bowl inside the refrigerator for about 20 minutes.
  • Bring the bowl out from the refrigerator, use your hand mixer, and whip until it forms a stiff peak.

Notes

This recipe is a good substitute for those who do not have whipped cream in the stores near them. You can store this whipped cream in the fridge for up to two days. Before you begin whipping, the utensils and the cream must be as cold as possible. In the fridge, cool the mixing bowl, whisk, and whipped cream well in advance.
You should chill everything in the freezer for ten to twenty minutes if you are pressed for time. Just be sure to set a timer. Whipped cream is best served right after it is made. Sweeten it with powdered sugar if you need to prepare it in advance. Doing this will help to stabilize it.
