  • Preheat the oven to 350°F, and prepare and grease your 9” by 5” loaf pan, then line with parchment paper.
  • Grab a bowl, add the coconut oil and honey, beat using a whisk until incorporated. Then gradually add the eggs and beat well.
  • Next, add and whisk on the milk, baking soda, baking powder, cinnamon, salt, and vanilla.
  • Stir in the zucchini using a rubber spatula until combined; Add the flour and fold until combined.
  • Bake at the center of your oven to 350°F for 55 minutes or until the cake turned golden brown and a skewer inserted in the center comes out clean.
  • Remove from the oven and place it on a cooling rack to cool off. Remove the zucchini bread from the loaf pan. Slice and enjoy!

Notes

If you want a herbal flavor to your bread, you can use olive oil. To achieve a neutral flavor, use vegetable oil. If you’re going to make it low-fat, you can replace oil with apple sauce. You can freeze sugar-free zucchini bread by letting the bread cool thoroughly first and then ensuring that you feel no warmth left when you touch it. Afterward, wrap in cling wrap and double wrap in foil. If you want it sealed entirely, go ahead and put it into a heavy-duty Ziploc freezer bag. Likewise, you can wrap it and freeze it in individual slices. Freezing it could last up to three months.
