Grease a baking pan with around a teaspoon of butter and set aside.
Grab a saucepan and add the following ingredients: corn syrup, sugar and water. Heat on a medium heat, covered, and allow to come to a boil.
Once boiling, remove the lid and leave uncovered. Use a candy thermometer to check the temperature and wait until the temperature reaches 270F.
Add the cubes of butter, salt and honey and mix throughout until the temperature reaches 300F. Immediately remove from heat and stir in the extract.
Pour the mixture into your greased pan and leave to set for a few minutes and then cut into squares. Leave to cool completely before serving. Enjoy!
