Cookie Cake Recipe

Today, we are going to be taking those sad, stale cookies from your pantry and turning them into a towering, triple-layered masterpiece that will have your taste buds jumping for joy. So, gather your ingredients, dust off your mixer, and get ready to bake your way to cookie cake glory!

  • The first step is to weigh and measure all of the ingredients you will need to prepare this flawless recipe. Then, depending on how quickly and powerfully your oven works, preheat it to 350°F and oil three round cake pans. We generally use 9-inch ones, but any other size can do.
  • In a medium bowl, whisk together the dry, “powdery” ingredients, that is, flour, baking powder, and salt, and set aside, you will need them later.
  • Cream the butter and sugar together in a large mixing bowl until you achieve a nice, light, and creamy consistency.
  • The next step is to beat in the eggs one at a time, followed by the vanilla essence.
  • Gradually add in the dry ingredients to the wet ones and mix, but gently, until just combined.
  • Fold in the crushed cookies and chocolate chips and that’s it.
  • Divide the mixture into three parts so you can bake a triple-layered masterpiece. It might be best to split it into three plates first to ensure that each layer is equal.
  • Pour the batter into the prepared pans and bake for about 30 minutes. You can even do a test with a toothpick, if the toothpick inserted in the center comes out clean, it’s time to take it out. Allow them to cool completely.
  • In a large mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract and whisk until firm peaks form.
  • Now it’s time for perhaps the most exciting part. All you have to do is place one layer of cake on a serving platter and spread a generous amount of whipped cream over the top. Repeat with the remaining layers.
  • If you want to add an extra dose of texture, feel free to crumble a few more cookies and sprinkle them on top of the cake for a crunchy garnish.
