Old Fashioned Pineapple Cake Recipe

    For the pineapple cake:

    For the caramel sauce:

    • 2/3 cup of sugar
    • 1/2 cup of butter
    • 1 egg yolk
    • 2/3 cup of evaporated milk

    How to Make Pineapple Icing

    • Prepare the Frosting - Grab a saucepan and add the following ingredients to the pan: milk, sugar, egg yolks, butter and vanilla. Once the ingredients are in the pan, turn the heat to medium. When cooking, you’ll need to stir throughout so that the eggs do not scramble. It will take around 10-12 minutes for the frosting to thicken.
    • Add Pineapple - Once thickened, add the crushed pineapple (ensure it’s been drained) and mix well. Remove from heat and leave to cool and thicken.
    • Decorate - Add the frosting to your cake layer(s). You can put it just on the top of your cake, or also on the sides and in between layers too. Enjoy!

    • Make the Batter - Preheat your oven to 350F and grease a dish for your cake. Now grab a mixing bowl and add the following ingredients: sugar, baking soda, salt, and flour. Mix those dry ingredients together. In a separate bowl, mix the eggs, along with the pineapple and melted butter. Once mixed, add the wet ingredients to the dry ingredients until well combined.
    • Bake the Cake - Once the batter is ready, pour it into your prepared dish. Place in the center of your preheated oven and bake for around 40 minutes. The best way to check it’s baked is to place a skewer into the center of your cake. If it comes out clean, your cake is ready. Remove from oven and leave to cool.
    • Make the Caramel Sauce - Grab a saucepan and add the butter. Once melted over medium heat, add the milk, egg yolk, and sugar. Whisk continuously and boil for around 5-6 minutes. During this time it should thicken. Once thickened, remove from heat and pour over your cake. You can use a spoon to drizzle over the frosting if you’d prefer. Leave to cool, slice, and enjoy!
