Today, we’re going to be taking a look at how to make coconut eggs without cream cheese. Coconut eggs are absolutely delicious, and while they’re most often enjoyed during the Easter period, I like making these tasty treats all year round. Mainly because they’re super easy to make and a hit with the whole family! Some people may not like cream cheese, so for that reason, I tried to make coconut eggs without cream cheese. Let’s take a closer look at how to make these handheld favorites.

Coconut Eggs Without Cream Cheese

Coconut Eggs with Sweetened Condensed Milk Recipe

  • 3/4 cup of sweetened condensed milk
  • 1/4 tsp of vanilla extract
  • 2 1/2 cups of sweetened shredded coconut
  • 3 cups of powdered sugar
  • 3 cups of chocolate chips or chocolate
  • handful of sprinkles optional

Coconut Eggs Without Cream Cheese

  • Make the Eggs - Firstly, gather the ingredients you need. Grab a bowl and add the coconut extract, sweetened condensed milk, sugar, and butter. Mix ingredients well until the consistency is smooth and moldable. Once you can mold the mixture, shape it into balls that are around 1 inch and then create an egg shape. Repeat until you’ve used all the mixture. Place onto a tray and put in the fridge for around an hour.
  • Melt Chocolate - Break the chocolate into small pieces and place in a microwavable bowl. Place in the microwave and check every 10-15 seconds that the chocolate is melting. This will prevent the chocolate from burning. Leave to one side.
  • Coat the Eggs - Dip eggs into chocolate (using a fork is ideal). Let any excess run off the eggs before you transfer them to a tray. Place onto a paper-lined sheet. Follow the same steps for all the eggs and then place in the refrigerator to harden. You can now serve and enjoy!

Coconut Eggs with Sweetened Condensed Milk Recipe

  • Make the Eggs - Grab a bowl and add the sweetened condensed milk, vanilla extract and coconut. Mix well until the ingredients are well combined. Now you’ll need to gradually add the powdered sugar. Keep mixing until you have mixed in all the sugar.
  • Shape the Eggs - Remove the mixture from the bowl and shape the eggs. You can either roll the eggs by hand (which is the easiest option) or you can use a rolling pin, roll out the mixture and use a cutter to cut the eggs and shape them. Once shaped, place on a lined baking sheet. For best results, place the rolled eggs into the freezer for at least half an hour.
  • Melt the Chocolate - Remove the eggs from the refrigerator and melt the chocolate. You can do this in the microwave, in a microwave-safe bowl, or you can boil water and place the chocolate into a glass bowl and melt it that way. Once smooth, remove from heat. Line a baking sheet with paper.
  • Coat the Eggs - Dip each egg into the melted chocolate. You can either do this by hand, or you can use a fork. I find it easier to use a fork. Once coated completely, transfer to your prepared tray and cover with sprinkles. Repeat this process until all eggs are covered. Once finished, place into the refrigerator for at least an hour, or until set. Remove eggs and enjoy!
