Instructions 

  • Make the sugar-free spice cake mix batter
    To start, preheat your oven to 320ºF (160ºC) without the fan setting. Then, line the bottom of your cake pan with non-stick baking paper and spray the sides with non-stick cooking or baking spray. Alternatively, you can brush the sides with melted butter.
    Then, add the sugar-free boxed cake mix into a large mixing bowl. Add in all of the ground spices and make sure that the dry ingredients are well mixed. Then, create a well in the center of the dry ingredients.
    Add all of the wet ingredients inside of the well. Using a whisk or fork, mix together the wet and dry ingredients until you get a uniform cake batter. Make sure that it doesn't contain any lumps.
    1 box (16 ounces) Pillsbury Sugar-free Premium Classic yellow Cake Mix, 1 tablespoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon ground or grated nutmeg, 1/4 teaspoon ground cloves, 1 cup water, room temperature, 1/3 cup vegetable oil, 3 large eggs, room temperature, 2 teaspoons allspice
  • Bake the cake
    Pour the sugar-free spice cake mix into the lined cake pans and bake them until they are done. For two 8-inch cakes, it will take about 34-38 minutes before they will be ready to be removed. Have a look at our tips and tricks section for baking times for other cake sizes.
    Before removing the cake from the oven, make sure that it has been fully baked. Use a cake testing needle or toothpick and press it into the center of the cake. If it comes out clean, the cake has been fully baked.
    Remove the cake from the oven and allow it to cool inside of the cake pan for roughly 15 minutes. Then, take the cake out of the pan and cool it on a wire rack for another 30-40 minutes, or until it has completely cooled.
  • Make the frosting
    To start, cream the butter until it becomes light and fluffy. This can take roughly 5 minutes. Then, add the sugar-free powdered sugar and mix until you have a smooth uniform frosting. Add 1 tablespoon of milk and mix again.
    You can keep adding milk, a little bit at a time until you have the consistency that you'd like.

  • Assemble and decorate your sugar-free spice cake mix recipe
    Once your cake has cooled, you can start slicing and assembling the cake. First, cut each cake into multiple layers and make sure each is level.
  • Then, to assemble your cake, place the first layer of cake directly onto the cake board or stand. Add a layer of frosting between each cake layer and repeat until you have reached the top.
    For the final layer, you can add buttercream in any way that you'd like. You can also coat the sides with as much or as little frosting as you'd like.

Notes

You can choose a wide variety of cake pans and sizes for this specific recipe. Two 8-inch cakes will bake for 34-38 minutes. Two 9-inch cakes will bake for 29-33 minutes. A bundt cake will take up to 43 minutes, while 24 cupcakes will only take about 20 minutes.
Always test the doneness of your spice cake before removing it from the oven. Allow roughly 80% of the time to elapse before opening the oven door to test the cakes' doneness.
