Wet ingredients for the microwavable brownie mix

  • 1/2 cup unsalted butter, melted then cooled
  • 2 large eggs, room temperature
  • 1/4 cup dark chocolate, chopped (or chips)
  • 1/4 cup milk chocolate, chopped (or chips)

Instructions 

  • Make the brownie pre-mix.
    To make the pre-mix, simply combine all of the dry ingredients together and give them a good stir. You can also add the chopped chocolate or chocolate chips now or later.
    Then, if you aren't going to be using the brownie pre-mix now, make sure to store it inside of an airtight container or glass jar.
    1 cup granulated white sugar, 1/3 cup cocoa powder, sifted, 1/2 cup cake flour, sifted, 1/4 teaspoon baking powder, 1/2 teaspoon fine salt, 1/4 cup dark chocolate, chopped (or chips)
  • Make the brownie batter.
    Once you are ready to make your brownies, start by preparing the baking dish. Make sure to use a microwave-safe container or bowl. Line the baking dish with some non-stick cooking or baking spray to ensure the batter doesn't stick to the container.
    Next, make the brownie batter. To start, decant all of the pre-mix into a large mixing bowl. Then, add the melted and cooled butter alongside the 2 eggs. Mix the ingredients together until a smooth lump-free batter forms.
    Finally, fold in the chocolate chips if you haven't already added them to the pre-mix.

  • Bake the brownies.
    Pour the brownies into your lined container. Level it using a non-stick spatula.
    Then, microwave the mix for roughly 3-4 minutes on a high heat setting. The center of the brownies should still be soft and moist, but the outside should be just set.
  • Cool and cut the brownies.
    Once the brownies have been completely baked, allow them to cool for about 5 minutes before unmolding them from the baking dish. Allow them to cool completely before attempting to slice them. Finally, cut the brownies into the size of your choice.

Notes

When storing the brownie pre-mix, make sure to keep it inside an airtight container in the pantry. You can also store it inside a re-sealable plastic bag.
You can easily adjust the texture of the baked brownies. This can be done by slightly under-baking or over-baking them. For gooey brownies, only microwave them for 3 minutes. And for firm brownies, microwave them for 5 minutes to ensure they aren't moist.
