Banana Pudding Brownie

Instructions 

  • To make this pudding mix, simply whisk together all of the dry ingredients and ensure that there aren't any lumps in the mixture. You can make this pre-mix in advance and store it in a glass jar in a cool dark place.
    Then, do not hydrate the instant pudding mix as you will be using it directly in the recipe with the other dry ingredients.
  • First, preheat your oven to 350°F (180°C) and line the baking tray with non-stick baking paper or cooking spray.
    Place the salted butter inside a small saucepan and allow it to melt completely over a low heat. Make sure to stir occasionally to prevent the butter from burning. Set the butter aside to cool completely.
    Add the melted butter to a mixing bowl and cream it together with the sugar and vanilla. Then, add the egg and mashed banana and whisk until they are evenly incorporated. Set the wet ingredients aside. 
  • In a large bowl, sift together the dry ingredients. Make sure they are well distributed and that there are no lumps.
    Then, add the wet ingredients to the dry ingredients. Fold them together until you have a smooth uniform batter. Finally, fold in the chopped chocolate or chocolate chips.
  • Pour the batter into the lined baking tray. This banana pudding brownie recipe bakes for roughly 20-25 minutes.
  • Allow the brownies to cool completely before attempting to cut them. This will ensure you get clean slices and the brownies don't tear apart, especially because these are so soft.
    You can first leave them in the pan to cool for an hour or two before removing them to cool completely. This will also help ensure they don't misform or break.
    Cut the brownies and serve immediately, or store them in an airtight container.
