Melt And Temper White Chocolate

Equipment

  • Small pot
  • Large glass mixing bowl
  • Silicone spatula

  • Fill a small pot with a bit of water. Place the large glass bowl over the pot and ensure that it fits tightly (no steam should escape through the sides).  Bring the water to a low simmer.
    Add the white chocolate chips to the glass bowl. Allow the chocolate chips to melt while gently stirring using a clean spatula. If your chocolate chips haven't completely melted within the first minute, remove the glass bowl from the heat and keep stirring the chocolate. This will help prevent over-heating and seizing the chocolate.
  • Once the chocolate chips are completely melted, gently heat them (while still slowly stirring) to 105 - 110°F (41-43°C).
  • Then, add the remaining third of white chocolate chips to the melted chocolate. This will help create stable beta crystals.
    When you have added the chocolate chips, keep stirring and allow the chocolate to cool as the chips melt. This will bring the temperature of the batch down to about 80°F (27°C).
  • Once the chocolate has been cooled to 80°F (27°C), you can slowly heat it to 84-87°F (29-31°C). Your chocolate is now tempered and can be used to create beautiful confections.
