Ingredients
  

For the Cake

  • 1 box strawberry cake mix (Pillsbury)
  • 1 cup all-purpose flour, about 5 ounces
  • 1 cup granulated sugar, about 7 ounces
  • 1/4 tsp salt
  • 1 cup room temped sour cream, about 8 ounces
  • 1/2 cup melted butter, about 4 ounces
  • 1/2 cup milk, about 4 ounces
  • 3/4 cup strawberry puree, about 6 ounces
  • 3 eggs
  • 1 tsp strawberry extract
  • 1/2 tsp lemon extract

For the Lemon Buttercream Frosting

  • 3/4 cup pasteurized egg whites, about 6 ounces
  • 5 cups powdered sugar
  • 3 cups unsalted butter (softened to room temperature)
  • 1/2 tsp salt
  • 1/2 tsp lemon extract
  • 1/2 cup lemon curd (you can opt this out if you like)
  • 1 tbsp lemon zest

Instructions 

For the Cake

  • Preheat your oven to 350 degrees Fahrenheit. Then, lightly grease your three 8-inch round cake pans with a non-stick cooking spray. Then, line your cake pans with parchment paper. Also, make sure to set them aside.
  • Afterward, prepare a medium-sized mixing bowl. Then, pour all of the content into your Pillsbury cake mix. Also, be sure to combine for about two minutes or until well combined.
  • Next, pour your strawberry cake batter into your three greased pans. And ensure to line round cake pans. Then, divide the batter evenly. Afterward, bake for about 25 to 35 minutes or until your strawberry cake cooks thoroughly.
  • Lastly, when your cakes are ready, allow them to cool in their pans for a few minutes. Then, transfer them onto a cooling wire rack to cool completely.

For the Lemon Buttercream

  • Put your pasteurized egg whites and powdered sugar inside a mixing bowl. Then, mix them using an electric mixer fastened with a whisk attachment. Afterward, mix on a low setting until the mixture combines. Also, be sure to set the setting on high to beat for about three minutes. Ensure to do so until it is like royal icing.
  • Then, add your salt and butter cut into small pieces to the mixture. Do so while still mixing on a low setting until well combined. Afterward, set the mixer to high and beat it for ten to fifteen minutes. Or until it becomes lighter in color and fluffy. Remember, it should not taste like butter anymore. 
  • Afterward, fasten your electric mixer with a paddle attachment. And be sure to mix the mixture on a low setting for about fifteen minutes. Doing so smoothens the mixture and reduces bubbles. Then, add your lemon curd, lemon zest, and extract until well combined. 

Cake Assembly

  • Before anything else, take your completely cooled cakes and make sure to stack them. Afterward, crumb coat your cake. Also, be sure to place it inside the chiller. Then, frost your cake and smoothen the sides, including the top, using a bench scraper, and chill.
  • Then, decorate your cake by piping some frosting around your cake. Also, placing sprinkles on top. Make sure to chill again. As usual, serve and enjoy!
