Sensational Banana Waffles Bisquick

Equipment

  • Waffle iron
  • Potato masher or fork

Ingredients
  

  • 2 cups Original Bisquick mix
  • 1 cup mashed banana very ripe (approximately 2 medium bananas)
  • 1 cup milk
  • 1/4 cup finely chopped walnuts or pecans if you prefer
  • 2 tablespoons vegetable oil
  • 1 egg

Instructions 

  • Prepare Waffle Iron and Mash the Bananas - Generously spray your waffle iron with cooking spray. Plug it in and allow it to fully heat up while you are making the batter. Using a potato masher or fork, mash up the bananas until all chunks are gone.
  • If you don't want to mash the bananas by hand, you can also use a blender or food processor to do it. Simply add the bananas along with the milk to your blender or food processor and blend until smooth.
  • Prepare Waffle Batter - In a large mixing bowl, mix together the Bisquick, mashed bananas, milk, walnuts, eggs, and vegetable oil. Whisk the mixture until it is fully combined. There may be some small lumps in your waffle batter.
  • Make the Waffles - Bake for about five minutes or until done on your waffle maker. The waffle maker should stopping steaming when they are ready. Carefully remove the waffle from the iron using a fork. Serve and enjoy.

Notes

To help keep the waffles warm as you prepare them, heat your oven to 200 degrees Farenheit. Once the waffles are made, place them on a wire rack or baking sheet. This will keep them warm and crispy while you are making the other waffles.
Leftover waffles can be stored at room temperature for two to three days in an airtight container. Waffles can also be kept in the fridge for up to a week. When ready to serve, heat them up in the microwave for 15-30 or place them in the toaster for two to three minutes.
Waffle batter can keep in the fridge for one to two days. Store any leftover batter in an airtight container. When ready to make, let the waffle batter reach room temperature before adding to the waffle maker.
These waffles can easily be frozen as well. Wrap them in a layer of plastic wrap followed by a layer of aluminum foil or place them in a Ziploc bag. When ready to serve, warm up waffles in the toaster for two to three minutes.
There are many delicious ways you can serve these waffles. Try them with maple syrup and a side of berries or top them with some chocolate chips. They also taste great with a drizzle of caramel sauce and some fresh whipped cream or even with chocolate sauce and walnuts.
If you want to have these waffles for dessert or want an extra special breakfast, serve them with a scoop of vanilla ice cream. You can even add some caramel or chocolate sauce to the ice cream for an extra special treat.
