Delicious Garbanzo Bean Chocolate Chip Cookies

If you are looking for a healthy alternative to regular cookies, these delicious chickpeas flour cookies are just that. Not only are they healthier than regular cookies, but they are also gluten-free. In addition to providing a lovely chewy texture, they also provide more protein as well.

  • Preheat the Oven and Grease the Baking Sheets - Preheat the oven to 350 degrees Fahrenheit. Grease your baking sheets with cooking spray, or if you prefer line them with parchment paper.
  • Beat Butter, Brown Sugar, Egg, Peanut Butter, and Vanilla Extract - In a large bowl, beat together the butter, brown sugar, egg, peanut butter and vanilla extract until smooth.
  • Combine the Garbanzo Flour, Cornstarch, Baking Powder, and Salt - In a medium mixing bowl, combine the garbanzo flour, cornstarch, baking powder, and salt. Mix well until combined.
  • Combine the Wet and Dry Ingredients - Slowly add the dry ingredients into the wet ingredients, mixing until a dough forms.
  • Add Chocolate Chips and Oats - Using a rubber spatula, carefully fold in the chocolate chips and oats. If desired, fold in nuts as well.
  • Chill the Dough - Chill the dough for 15 minutes in the fridge.
  • Bake the Cookies - Scoop the cookie dough into tablespoon-sized balls. Arrange them on the baking tray so they are two inches apart.
  • Bake the cookies for nearly 10-13 minutes, or until golden brown. Allow them to cool on the baking trays for 2-3 minutes before transferring to a wire rack to fully cool.

Notes

These chickpea cookies can be stored in an airtight container at room temperature for 5-7 days. They can also be frozen for 3-6 months. Place the cookies in a Ziploc bag, making sure they are tightly sealed, before placing them in the freezer.
Frozen cookies can be thawed at room temperature for one to two hours. You can also thaw them overnight in the fridge as well to thaw. If desired, you may warm the cookies up in the microwave for 10-15 seconds.
If your cookies come out puffy, you can use a spatula to flatten them out while they are still warm. Puffy cookies will have a more cake-like texture.
If you like nuts, you can add chopped walnuts or pecans. You can also add chocolate chunks in addition to chocolate chips as well. If desired, you may also leave out the rolled oats.
