Strawberry Margarita Cake With Tequila Buttercream Frosting

Instructions 

For the Cake

  • Preheat your oven. Ensure to set it to 350 degrees Fahrenheit. Then, grease your baking pans with a non-stick cooking spray and set them aside.
  • Afterward, combine or incorporate the flour, baking soda, baking powder, and salt in a large mixing bowl.
  • After that, utilize a stand mixer in creaming the butter and sugar until it becomes light and fluffy.
  • Then, add and beat the egg whites and vanilla extract until combined.
  • Next, incrementally add and beat the dry ingredients(flour mixture) until everything combines well.
  • After that, add and beat the lime juice, tequila, and lime zest to the mixture and combine.
  • Afterward, grease the cake pans and pour. Then, divide the cake batter equally in each baking pan.
  • After that, bake the strawberry margarita cake in the oven for about 25 to 30 minutes or until cooked. You can use the toothpick method to find out if your cake is ready.
  • Finally, take them out from the oven and allow the cakes to cool completely in a wire rack for frosting.

For the Tequila Buttercream Frosting

  • Before anything else, combine unsalted butter and confectioners sugar using a stand mixer.
  • Then, add the rest of the ingredients, tequila, triple sec, strawberry puree, and lime zest. Ensure to add them to the butter and sugar mixture. After that, make sure to beat until everything is smooth. Next, beat the mixture until it reaches stiff peaks.
  • Lastly, scoop 1 or 2 cups of frosting into a piping bag and set it aside later.

Cake Assembly

  • First of all, remove the domes in the cakes. After that, level them out using a cake leveler or a long serrated knife.
  • Then, on a cake board, add a small frosting on the center of the board to make the cake stick. And then place one layer of cake.
  • After that, add 1 cup of frosting on top of the first layer of the cake. Then, even it out smoothly using an offset spatula.
  • Afterward, stack the second layer of cake on the first layer of the cake with frosting. Then, place another cup of frosting on top of the second layer and even it out. Then, place the final layer of the cake on top of the frosted second layer.
  • After that, crumb coat the cake and chill for about 10 minutes.
  • Then, take your chilled cake and use the remaining frosting to frost your cake entirely using an offset spatula.
  • Afterward, pipe dollops on top of your frosted cake using the frosting in the piping bag earlier.
  • Then, decorate your cake with lime and strawberry slices.
  • Also, add the zest of lime all over on top of the cake.
  • After that, chill or refrigerate your cake for about an hour and allow the frosting to harden.
  • Finally, take it out and slice. Then, serve it to your guests.

Notes

Remember that this recipe is not for kids since it contains alcohol. Moreover, you need to chill the cake in the fridge since it has fresh fruits on top. Also, always store the leftover cake inside the refrigerator to make it last longer.  You can create a strawberry puree of your own for this recipe, or you can purchase store-bought.
