Cake Lace Recipe: Incredible How-To Guide

Equipment

  • Lace mat
  • Silicone baking mat

Ingredients
  

  • 1/3 cup boiling water
  • 1/4 teaspoon glucose syrup
  • 1 tablespoon Tylose Powder
  • 1 tablespoon corn starch
  • 1/2 teaspoon confectioners' sugar or icing sugar
  • 1 teaspoon glycerin
  • Food coloring
  • Clear piping gel

Instructions 

  • Add the Glucose Syrup - Mix together the glucose syrup and the boiling hot water.
  • Add the Tylose Powder - Add the Tylose powder to the mixture. Mix well and let the mixture stand for 5-10 minutes.
  • Add the Corn Starch, Icing Sugar and Glycerine - Mix together the corn starch, icing sugar and glycerine. If needed, add two teaspoons of water.
  • Add Food Coloring - Add your food coloring of choice. Be sure to fully combine the mixture as well to evenly disperse the color.
  • Add to Lace Mat - Carefully pour your sugar mixture into the lace mats. Place a silicone mat on top if needed.
  • Set the Edible Cake Lace - Let the cake lace fully dry at room temperature overnight for 12 hours. In addition, you can also bake the lace at 60 degrees Fahrenheit for 15-20 minutes. Once ready, flip the lace out onto a silicone baking mat.
  • Arrange the Cake Lace Mixture - Carefully add the dried lace to your cake. Slowly, release the cake lace to ensure no breakage happens.
  • Apply a thin layer of clear piping gel to your cake. Carefully wrap the lace around your frosted cake. Gently press the lace sheets on your cake to keep them in place.

Notes

Store any leftover edible sugar lace in between layers of parchment paper in an airtight box. Be sure to avoid leaving the mixture out, as it can become brittle and stale.
When properly stored, the edible sugar lace can keep for up to a year. Be certain to avoid keeping it in direct sunlight, as this will cause it to melt. In addition, do not keep it in the fridge as it may dry out, leading it to become brittle.
If you accidentally overbake your edible sugar lace, place it in a zip lock bag with a damp paper towel for a few minutes. Do not actually let the lace touch the damp towel. This will help the elasticity return to the lace, making it easier to work with.
There are many different lace mats you can purchase. It is best to purchase thinner mats, as thicker ones can be harder to work with. However, the level of thickness is all up to you.
Use a sharp knife to trim any excess off the edible sugar lace. This will allow you to easily get just the right size to put on your cake.
Your lace mat should be washed with water and mild dish soap. It is best to wash them by hand, as they are delicate.
Edible lace can go on cakes decorated with buttercream and fondant as well. The clear piping gel will help keep the lace in place on your cakes.
