  • 2 pcs of vegan butter 230 grams at room temperature; the preferred brands are Miyokos, Earth balance, and Country Crock Plant Butter.
  • ½ tsp of vanilla extract 5 ml
  • 3 ½ to 4 cups sifted organic vegan-friendly powdered sugar about 450g
  • 2-3 tablespoons full fat coconut milk or any other dairy-free milk

Instructions 

  • In a bowl, place the butter and half of the powdered sugar. Then, utilize a stand mixer equipped with a paddle attachment and combine the butter and sugar.
  • Start with low. Then, mix until everything incorporates well. Make sure to do this slowly to avoid having a gritty mixture.
  • Pour the remaining half of the powdered sugar and mix on low until completely incorporated.
  • Add the vanilla extract and the full-fat coconut milk to the mixture.
  • If you think the mixture is too thick for your liking, add one tablespoon of additional milk. Do that until the consistency satisfies you. Or, if you think that it is not thick enough, you can add more sugar.
  • With the use of a rubber spatula, scrape the sides and bottom of the bowl.
  • Once you combined everything, you can use it immediately or store it in the refrigerator to save it for later.

Notes

If you cannot find high-fat vegan butter, you can use any vegan butter. Although, you will not achieve the same results since it may not be the same consistency. As a result, it will be a lot softer. 
Furthermore, avoid leaving the vegan buttercream frosting at room temperature for a long period. Keep that in mind to stop the buttercream frosting from spoiling or melting. That is why you should use the frosting immediately or store in the refrigerator.
To store your vegan buttercream frosting, place it in a bowl with an airtight lid. Likewise, you can cover it with plastic wrap. That way, the vegan buttercream frosting will last in the refrigerator for a month or so. And it can last for about six months in the freezer. When you use the frosting, make sure to stir the mixture before you use it for frosting. 
Sifting the powdered sugar before incorporating it with the butter will help avoid getting clumps in the mixture. The quality of powdered sugar is also one thing to consider. Also, it would help to mix in extra powdered sugar if the frosting is too thin.
Do this until you achieve the appropriate consistency. In addition to that, you can chill the vegan frosting until the fat solidifies. 
Moreover, to achieve different flavors in your frosting, you can substitute milk with flavored liquid like fruit juice. In addition to that, you can use jellies, coffee, and jams. Likewise, if you wonder if you can add color to your frosting, you sure can.
