01 1 1/2 cups cake flour, sifted

02 1 3/4 cups granulated sugar, divided

03 12 egg whites, at room temperature

04 1/4 teaspoon salt

05 1 1/2 teaspoons cream of tartar

Preheat your oven to 325 degrees Fahrenheit. Sift the flour together with 3/4 cup of sugar.


In a large bowl with an electric mixer, beat the egg whites and salt together until foamy. Then, add the cream of tartar and beat the mixture until soft peaks form.


Add the sugar in, 1/4 cup in at a time, beating after every addition. Beat the egg white mixture until stiff peaks form and gently fold in the vanilla extract with a rubber spatula.


Carefully fold the flour into the egg white mixture, 1/4 cup at a time. After each addition, fold in by using an under and over motion.
