To start off, allow your eggs to come to room temperature and then fill a pan of water so the water will cover the eggs by one inch. Then, heat the water until it reaches 140 degrees Fahrenheit. Any temperature above 142 degrees Fahrenheit and the eggs will begin to cook.
Place your eggs in the medium saucepan in an even layer for three and a half minutes. Monitor the water with a digital thermometer to make sure the temperature never goes above 142 degrees Fahrenheit.
After three and a half minutes, transfer your eggs to a bowl of cold water to stop the heating process. Then, store the eggs in the fridge and use them for any recipe, whether you cook them or not. This pasteurized both the egg yolks and egg whites, making them both safe to consume.
